Dôle
Dôle is Switzerland's primary red blend, similar to the famed Red Bourgogne of Burgandy. Like Red Bourgogne, Dôle typically consists of at least 51% Pinot Noir and Gamay, with Pinot Noir being the dominant grape. Dôle's seductiveness lies in its balance, with fruity aromas and beautifully melted tannins. It has been a benchmark of Maision Gilliard's excellence since 1886.
Bouquet: Mouth-watering fragrance of red ripe fruits like strawberries and raspberries.
Palate: Soft tannins and a lovely light-medium body with bright fruit berries matching the nose. Following are subtle herbaceous and almost earth tones that compliment the fruitiness.
Pairings: Cold cuts, filets of beef, beef fondue, braised veal, breaded schnitzel, roasted chicken, and duck breast. Of course, Swiss wine pairing is only complete with an assortment of soft, creamy cheese.
